Come join me (chef and recipe developer Erin Bunting) for this foraging walk and hands-on cooking class exploring the bounty of spring greens available from nature’s larder. April is an amazing month for wild greens – we will be discussing, identifying and cooking with plants such as wild garlic, nettles, three-cornered leek, sorrel, garlic mustard, chickweed, dandelion and many more. We might even find a few early edible flowers.
We’ll start with a short foraging walk around Colin Glen Forest Park and then head to the kitchen at the Healthy Living Centre in Colin Community Allotments to prepare a delicious lunch using many of the spring greens we’ve identified on the walk. Together we’ll make a wild greens & feta filo pie, a green salad using lots of wild greens with a sorrel and dandelion honey dressing, roasted carrots & beets with yoghurt and wild garlic pesto. We’ll make enough wild garlic pesto so everyone can take home a small portion. Then after we’ve feasted on everything we’ve made we’ll finish with a delicious cake with a wild sorrel dressing.
Recipes for everything we cook will be provided. Suitable for vegetarians and can be adapted for people following a gluten free diet – but it is essential you let us know when you book. This course is unfortunately not suitable if you are following a dairy free or vegan diet.
